Crispy Chicken with Lime Butter

Chicken thighs rendered skin-down for twenty-odd undisturbed minutes, then a pan sauce of stock, lime and maple mounted with cold butter.

CHICKEN: 4 bone-in, skin-on chicken thighs
SEASONING: salt and pepper

Notes

Twenty-five minutes skin-down is the recipe. Everything else is quick. That long stretch over medium heat is a rendering step before it is a browning step — the fat has to leave the skin before the skin can crisp, and it leaves slowly. Turning the heat up to hurry it browns the outside over fat that has not rendered, which is how you get skin that is dark and still flabby.

Undisturbed means undisturbed. Every lift to check breaks the contact that is doing the work. Judge it by the edges and by how freely the thigh slides when you finally do move it.

Dry surface, then a rest. Patting dry removes the water that would otherwise have to boil off before any browning starts, and the 10-30 minutes lets the salt draw moisture out and then reabsorb, seasoned.

Three tablespoons of fat, measured. This is the one number in the recipe worth respecting rather than eyeballing. The reserved fat becomes part of the finished sauce; leave the whole pan's worth in and the butter has too much oil to emulsify into, and you get a greasy pool instead of a glossy one.

Cold butter, whisked in. Standard monter au beurre — cold butter added to a reduction emulsifies rather than melting straight into oil. Take it gently and the sauce thickens and turns glossy; overheat it and it breaks.

Reading the diagram

The pan is the spine. Read straight across: season, render, flip, then the chicken comes out and 3 tbsp of its fat stays behind, and that pan is what the stock, lime and maple go into. The reduction is drawn after the chicken leaves because that is when it happens, and it takes what the chicken left as an input rather than starting from nothing.

The chicken is what re-enters instead. It appears again near the bottom as "the rested chicken", feeding the final step. That is the compromise this format forces: a step hands forward exactly one result, and the removal step has to choose between handing forward the chicken or the pan. Handing forward the pan keeps the order honest, at the cost of the chicken coming back as a leaf.
